The Food Guys: How To Make Clear Bone Broth

Bone broth simmering on the stove.

Besides being wonderfully rich in protein and a great source of minerals, bone broth is easy to make and very versatile. The Food Guys share some tips on how to prepare bone broth, with chicken or beef bones.

Preparing bone broth

The Food Guys prefer to start by saving the bones from roasted chicken or beef, leaving some bits of meat on the bone. Add to a pot with water, carrots, onions, celery, peppercorns and a little vinegar.

For chicken bones, 3-4 hours of simmering should be enough, for beef 10-12 hours or more may be necessary.

Avoid the "scum" that can develop in a bone broth by starting with cold water and raising the heat very slowly to a simmer. The Food Guys remind us that "simmer" means "a bubble or two breaking the surface, not a boil."

(Broadcast: "The Food Guys," 7/12/15 and 7/16/15. Listen weekly on the radio at 11:50 a.m. Sundays and again at 4:54 p.m. Thursdays, or via podcast.)
